Where We Come From
The name Chiltepin comes from one of the oldest and most beloved chiles in Mexican culinary history — a tiny wild pepper with bold heat that grows native across northern Mexico and the American Southwest. It’s a fitting name for a restaurant rooted in the real flavors of Mexico, because great Mexican food has never been about subtlety. It’s about character.
Our founders brought that same spirit to Colorado Springs: a commitment to preparing dishes from scratch, using quality meats, hand-made tortillas, and recipes that don’t come from a can or a shortcut.
